Seafood Macaroni and Cheese Recipe:

Nothing calms my soul more than walking barefoot along the edge of the ocean as it rolls in along the coast of North Carolina. Feeling the coolness of the water as it rolls across the top of my toes, then feeling the sand as it disappears from beneath my feet, it’s just so relaxing.

I love the beach. Even though I don’t spend much time there, I still enjoy each and every visit. I could just sit, watch, and listen to the waves rolling in for hours.

Of course, all visits to the coast, pretty much require a few trips to enjoy the bounty that the ocean provides. I have a couple of favorite seafood restaurants, and really enjoy the Calabash style of lightly battered and lightly fried shrimp, fish, oysters and deviled crab. Even after spending a few years working in the kitchen of a seafood restaurant, I still love a good plate of seafood with Cole slaw and baked potatoes.

Managing the kitchen of my brothers seafood restaurant a few years back was some of the hardest work I’ve ever done. The hours were long, the kitchen was very hot, and the rush to feed over 500 people in just a few hours was demanding. All the neighborhood cats would follow me home, and the family was quick to tell me I might not be smelling fresh and clean when I arrived home at the end of the day.

But, I still love seafood.

Seafood Mac and Cheese may not have been something that mama prepared as I was growing up. The fish we ate came from a local pond most of the time. Fresh Spots were sometimes given to us by a cousin when she and her family went fishing along the coast, and daddy ate some oysters every now and then. I was probably a teenager before I discovered shrimp, oysters and deviled crab for myself.

On the other hand, Macaroni and Cheese WAS the first dish that I learned how to cook. Yes, it came out of one of those blue boxes with the little powdery pack of cheese flavoring, but to me, I was cooking.

Mama taught me how to prepare the macaroni in the boiling water, then stir in the butter, milk and the little packet of artificial cheese, because it was one of her favorites. At least she said it was. She worked just about a block from our house and often walked back home for lunch. During the summer months, she would let me cook up the blue boxed macaroni and cheese a couple of times a week for her. She ate it, whether it was really her favorite or not.

The really great thing about this recipe for Seafood Mac and Cheese, is that you can use your favorite seafood, and seafood combinations, to make it your own. I’m using crab meat and shrimp, but scallops, shrimp, even oysters, would make it just as tasty.

Of course, seafood cost quite a bit more these days than it did when we were in the restaurant business. We thought shrimp were expensive back then, but I just paid $12.50 for one pound of frozen shrimp this week to make this recipe. I only used half a pound, but you could easily add more if desired. Even imitation crab meat would work good if you like that. There are lots of possibilities with this one.

Seafood Mac and Cheese Recipe:  You’ll need these ingredients.

Seafood Mac and Cheese, peel and de-vein the shrimp.

If you’re using shrimp, you’ll want to peel and de-vein the shrimp first. Rinse them well, place them in a bowl and refrigerate them until called for in the recipe.

These larger shrimp were the only fresh shrimp I could find locally at this time of year. The smaller popcorn shrimp would be better suited for the recipe, but I’m going to chop this up into smaller pieces a little bit later.

It’s been sometime since I worked with my brother in his Seafood Restaurant. We thought shrimp were priced high back then, but these little fellows cost me $12.50 per pound this week. I went with the shell on, as they were a little cheaper than the one’s already peeled and de-veined. It’s fairly simple to do, so I was trying to save a little money by doing it myself.

Prepare the macaroni according to the directions on the package. Then, drain them in a colander.

Seafood Mac and Cheese, place cooked macaroni in a large bowl or pot.

Once drained, I just placed them back in the pot that I cooked them in. A large bowl would work just as well, but why mess up another dish? The noodles are still hot, and no, I didn’t rinse them. Just in case you were wondering.

Add the Sour Cream.

Then, stir it up really good, making sure all the pasta is coated good with the Sour Cream.

Seafood Mac and Cheese, add the crab meat.

Add the Cram Meat. I’m using clump crab meat in a can, but use fresh if you have it. I’m a pretty big fan of Imitation Crab Meat as well, and that would have worked good I think, so don’t be afraid to use that instead. The really nice thing about this recipe, is that you can use the seafood of your choice when making it. Experiment around and find what you like best.

Stir it all up again to fully combine everything. Then, set it aside for the moment while we prepare the other ingredients.

Seafood Mac and Cheese, chop the spring onion.

Chop up the Spring Onion into some very small pieces. I’m just using one, you can certainly add a little more if you wish.

Seafood Mac and Cheese, grate the cheddar cheese.

Grate the block of White Cheddar Cheese. I prefer using the block cheese and grating it myself. It seems to melt a little easier, and you don’t get all that powdery stuff that comes on the pre-shredded cheese. Set this aside for later.

Seafood Mac and Cheese, grate the mozzarella cheese.

Grate the Mozzarella Cheese while you’re at it. Set this aside.

Seafood Mac and Cheese, add butter to your skillet.

Place a skillet over medium heat on your stove top. Add the Butter and let it melt.

Seafood Mac and Cheese, place the shrimp in the skillet.

Toss the shrimp into the skillet.

Seafood Mac and Cheese, stir and flip the shrimp until lightly cooked.

Stir and flip the shrimp for about two minutes, until they start showing good color. Then, remove them from the pan and let them cool. We’ll chop them up once they cool down a bit. Resist the urge to eat them just like they are though, it’ll be hard, but you can do it.

Seafood Mac and Cheese, add the chopped onions.

Add the chopped onion to the butter remaining in the skillet. Stir it around for a minute, letting it cook until tender.

Seafood Mac and Cheese, sprinkle flour in the skillet.

Sprinkle the flour around the skillet. Start stirring immediately so it doesn’t burn.

Seafood Mac and Cheese, stir and let cook.

I dropped the heat down a notch below Medium. Stir the flour and onions together and let it cook for about one minute. The flour needs to cook a bit to remove the flour taste. We’re making a bit of a roux.

Seafood Mac and Cheese, gradually add milk.

Gradually add the milk, and keep stirring constantly. As long as you keep stirring, you shouldn’t have any lumps forming.

Seafood Mac and Cheese, stir until it starts to thicken.

Continue to stir the milk until it starts to thicken a bit.

Seafood Mac and Cheese, add some cheese.

Start gradually adding the White Cheddar Cheese to the milk in the pan. Keep stirring, scraping the bottom to prevent the cheese from sticking and burning.

Seafood Mac and Cheese, add remaining cheese.

Continue adding the cheese until you’ve got it all mixed in. When it’s fully melted, add the cheese mixture to the macaroni in the pot.

Seafood Mac and Cheese, chop the shrimp.

Chop up the cooked shrimp. Don’t chop it too fine, leave it in about half inch sized pieces.

Seafood Mac and Cheese, add the shrimp.

Stir the melted cheese into the macaroni, then add the shrimp and stir that in real good.

Seafood Mac and Cheese, season to taste.

Taste the mixture to see if it needs any Salt or Black Pepper. Season to taste as desired.

Seafood Mac and Cheese, butter up a casserole dish.

Generously butter up a 2.5 quart casserole dish, or something similar.

Seafood Mac and Cheese, add the mac and cheese mixture.

Spread the macaroni and cheese mixture evenly in the casserole dish.

Seafood Mac and Cheese, add the mozzarella cheese to the top.

Sprinkle the Mozzarella Cheese on top, spreading it out evenly across the dish.

Seafood Mac and Cheese, add the bread crumbs.

Sprinkle a light layer of the Panko Bread Crumbs across the top of the Mozzarella Cheese. This adds just a little bit of crunch to the finished baked dish.

Seafood Mac and Cheese, add the paprika.

Sprinkle a little Paprika across the top for added color.

Seafood Mac and Cheese, bake at 350 degrees for 20 to 25 minutes, or until lightly browned.

Place the dish in your oven and let it bake for about 20 to 25 minutes at 350°F, or until lightly browned on top.

Everything in the dish is already cooked, we’re just letting the Mozzarella Cheese melt on top and slightly browning the bread crumbs. Remove from the oven when done, set on a wire rack or pot holder to let cool a little.

Seafood Mac and Cheese, serve while warm and enjoy.
