Once again, I’m delighted an honored to work with our good friends at OXO Good Grips and their Cookies for Kids Cancer 50 State Challenge. This is their 4th year of participation, and my second year.
It’s all in support of National Childhood Cancer Awareness Month for September. It helps support awareness and to raise funds to help develop new, and less toxic pediatric cancer treatments.
Bake sales, races, all types of fund raising events are held in all 50 states to support this cause. OXO has also agreed to donate $100.00 to Cookies for Kid’s Cancer based on my participation with this post. How cool is that?
OXO provided me with several tools to complete this recipe, and I’ll tell you more about them below.
One of those is the OXO Baker’s Decorating Tool with 6 Stainless Steel Tips. I was really looking forward to trying this out because I have ZERO skills when it comes to cake decorating. I’ll prove it to you further down as well. Smile

The Baker’s Decorating Tool contained a recipe book with a couple of frosting recipes. I decided to make their Vanilla Buttercream Frosting recipe here, which was developed in their Test Kitchen while they were working on the Decorating Tool itself.
You’ll find a good number of OXO tools in my kitchen. I use them daily, and love working with them. They’re all very well made, something you realize as soon as you hold them in your hand.

Vanilla Buttercream Frosting recipe. You’ll need these ingredients.
Please note. The recipe should be made with UNSALTED butter. I discovered I didn’t have any unsalted butter when I started to make this recipe. It worked, but unsalted will be much better.

Place the room temperature butter in a large mixing bowl.

Beat the butter on medium speed for several minutes, until it’s smooth and creamy.

Measure the confectioners’ sugar into a sifter.
I like to use my mama’s old sifter, but any type of sifter will work.

Sifting the sugar will remove any lumps that may be in it.

Gradually add the sugar into the butter, beating on low speed with your mixer until it is well incorporated. Continue to add sugar until it’s all added in.

Add the vanilla extract.
I’m using clear vanilla here. It keeps the frosting looking whiter. Regular vanilla will work if you don’t have the clear.

Add the salt.

Increase the speed of the mixer to medium, and beat the frosting for about three more minutes.

Add food coloring if desired.
I’m going to make about three different colors of the frosting. Just remove a small amount and place in a separate bowl. Add drops of food coloring depending on how deep a color is desired.

Mix well.

Of course, you’ll need some cupcakes to use with your frosting.
OXO suggests using a cooking spray to spray the bottoms of the silicone baking cups. The liners also have a FILL-LINE so you know just how much batter to use.

Use a spatula to load some of your frosting into the decorating tool. Pack it in to help prevent any air bubbles in the frosting when you use the tool.

Just squeeze the handles and decorate your cupcake.

The filling injector tip lets you add filling to your cupcakes if desired. Or, just add some extra vanilla buttercream to the inside of your cupcakes if you like a whole lot of frosting.

Insert the filling in from the top, then cover the top with your buttercream frosting. The filling will be an added surprise when you bite into the cupcake. How sweet is that. (Sorry, pun intended).

Okay, I need some more practice with my decorating skills. I’m stepping out on a limb by showing you my beginning attempts here. Go ahead, laugh, I’m happy to make you smile today.
I’ve always wanted to learn how to decorate cakes, but just never have devoted the time to trying to learn. Maybe I can do that now.
I think getting the consistency of your frosting is one of the most important parts. Keep in mind that if your frosting is too thin, you can add more confectioners’ sugar. If it’s too dry, just add a little milk or perhaps even a drop or two of water.

Description

Ingredients
- 1 cup (2 sticks) Unsalted Butter, at room temperature
- 1 ½ cups Confectioners’ Sugar, sifted
- 1 teaspoon Vanilla Extract
- ¼ teaspoon Salt
- Food Coloring (optional)
Instructions
- Place butter in a large mixing bowl.
- Mix for several minutes with an electric mixer on medium speed.
- Gradually add confectioners’ sugar, beating on low speed until sugar is well incorporated.
- Add vanilla.
- Add salt.
- Increase speed to medium and beat for 3 minutes.
- Add food coloring, if desired, after all ingredients have been incorporated.

You did a great job. Buttercream is my favorite, it is so versatile. Just add a different extract and it’s orange or lemon. Add a little cocoa and you have chocolate icing. I have even added cherries and strawberries! I, too, love OXO, did you know many of their utensils have a lifetime warranty?

What a pleasant surprise today when your second newsletter this week showed up in my inbox. Of course, I’ll miss it next Monday. I plan to make these cupcakes soon and put a frosting on them. However, I don’t intend to decorate them. And here’s why – many years ago, I took cake decorating lessons for six weeks. I bought all the necessary decorating equipment: bag, tips, turntables, etc. Sadly, I was no more proficient at the end of the six weeks than I was at the beginning. I couldn’t even bake the layers to look pretty. They were lopsided if you know what I mean. So I gave away all my equipment and decided to find a new hobby. I must say some of the others in the class with me had much better results. Theirs looked professional compared to mine. Yours look very good for a beginner. 4

Not really a frosting kind of girl. If I decide to add any it would just be a shake of confectioner sugar on top. Or I’ll mix it with a little milk to make a simple glaze.
Toss up between Coconut Pecan and Seven Minute Frostings.

Buttercream is the best frosting in my book! Other frostings I will try,but I find Buttercream easy to work with,never boring as you can vary the flavor easily, and the final product results in a lovely crowning presentation no matter what it adorns. I know your cupcakes will be delicious-the very picture makes the mouth water in anticipation of the first taste!

Favorite icing was my mom’s double boiler vanilla icing, as not big on sweet things this icing was just my style whipped creamy and not too sweet. Mom always made this icing with a chocolate mayonnaise cake for me for my birthday. Sometimes she would make me my second dessert banana cream pie oh how I miss my dear sweet mom and all her smiles hugs kisses and homemade foods…love you Mother, miss you and Daddy!
I think your cupcakes are beautiful! Back in the day(1964) my older sister was supposed to take cupcakes to school but she told Mom the night before. Mom stayed up half the night making them for her. Lovely chocolate cakes with white icing. She made it to the school with two dozen little cakes on a platter. As she got to the school steps she slipped. You know back then the ladies all wore heels and gloves. She fell down, ripped her stockings but held that cupcake plate up over her head to keep from dropping them. Not a single cake got injured. She loved to tell that story every time she made cupcakes.
My favorite frosting for cupcakes would be American Buttercream or Ermine depending on what taste or texture I wanted. Both hold up better on a warm day than most other types. American Buttercream is thicker and sweeter than the Ermine frosting and would be better for decorations.

Hi Steve, I’ve been using a buttercream icing for years. It’s almost the same as yours only I don’t add salt, but I do add 2Tbl of milk to make it spread easier on a cake. Love your decorating technique! Keep practicing, you’ll get better. lol

Not much of a cake decorator either. I have used a similar recipe for years and it is our family favorite. If you only have salted butter, reduce salt in recipe or leave it out.
