Delicious homemade Turtle Candy. We’re making our own caramel from scratch. It’s much easier than you might think, especially if you get all the ingredients together before you start cooking it.

1 cup Light Whipping Cream
1 cup Granulated Sugar
1/2 cup Light Corn Syrup
1/4 teaspoon Salt
3 Tablespoons Butter
1/2 teaspoon Vanilla
11/2 cups Pecans
Chocolate Chips or Candy Melts

Place heavy 3 quart sauce pan over Medium heat.
Add whipping cream. Heat to lukewarm.
Remove half of the warm cream. Set aside.
Add sugar to cream remaining in saucepan.
Add corn syrup.
Add salt.
Cook mixture, stirring constantly, until mixture boils.
Slowly add reserved cream, stirring constantly so mixture does not stop boiling.
Stirring constantly, let mixture cook for 5 minutes.
Add butter, one teaspoon at a time, stirring constantly.
Reduce heat, continue to stir and let mixture come up to 245F degrees.
Remove from heat.
Add vanilla. Stir until fully combined. Let caramel cool slightly.
Arrange pecans on baking sheet as desired to form each turtle.
Drop one teaspoon of caramel sauce on top of each group of pecans.
Let cool just a bit.
Add chocolate over top of each turtle, or dip the whole turtle in chocolate.
Let cool.

Can be made with chocolate chips or candy melts. Keep in mind that sugar can get VERY HOT once it is boiling. Use extreme caution at all times and maybe keep the kids out of the kitchen until it’s finished cooking.
