Salisbury Steak Recipe

Salisbury Steak Recipe
We’re cooking up Salisbury Steak with Onions and Gravy.  It’s one of those traditional Southern comfort food items you’ll find on the menu at Mom and Pop style restaurants and diners throughout the South.  Fresh ground beef, caramelized onions, and rich brown gravy make this one more delicious item to serve to your family and friends.  All you’ll need to make it even better are some mashed potatoes.  Now we’re talking!

Now, don’t go thinking this will taste like one of those cheap frozen dinners you might find in the frozen foods section of your local grocer.  Those little trays with plastic on top just can’t compare to homemade.  This one is just about as quick and easy to prepare…except for making the caramelized onions.  That takes a little bit of time but it will be well worth the added effort.

I must admit though, I’ve had my fair share of the imposters.  When you can buy a packaged meal with meat, gravy, mashed potatoes, corn and a brownie, all for one dollar, it’s difficult to not pop one or two in your grocery cart.  Still, I hope you will give this little recipe a try soon.

Some may claim this to be hamburger steak.  We’ll be adding a recipe for hamburger steak later.  Hamburger steak is usually not served with gravy like the salisbury steak is served.  Instead, it’s served as a fried or grilled meat patty and may include some grilled onions on top.  You can add your favorite steak sauce to it if you so choose.  It’s most often served with mashed potatoes as well, topped of course with…gravy.

This is a pretty straight forward recipe.  Just don’t rush the onions too much and it will be quick and easy.  We’ll cook up the patties first, caramelize the onions, and then simmer it all together in a rich brown gravy for about 15 minutes.  While that’s cooking, we’ll whip up some mashed potatoes and get ready for some real meat and potatoes Taste of Southern home cooking.  Ready?

Salisbury Steak ingredients
Here are the ingredients you’ll need.  I’m using Ground Beef Round in an 80/15 mixture.  I’m showing a two pound package in the photo, but I’m only using half of that in the recipe which will give me four servings.

 

ground round
I just divided the package in half and placed about one pound in a mixing bowl.

 

ground round divided
Use your hands or a fork to break it up a bit.

 

add some pepper
Begin by adding 1/2 teaspoon of Black Pepper.  We’ll just go ahead and add the first few ingredients, and then we’ll mix it up.

 

add some salt
Add 1 teaspoon of Salt.

 

add some garlic powder
Add 1/2 teaspoon of Garlic Powder.

 

adding the worcestershire sauce
Add 1 teaspoon of Worcestershire Sauce.

 

add one whole egg
Add one whole egg, minus the shell of course.  (Smile)

 

add some bread crumbs
Add 1/4 cup of dry bread crumbs.  I used bread crumbs like mama always used.  I took one slice of white sandwich bread, and crumbled it up in my hands really fine.  It’s easier with bread that is a day or two old.  Of course, you could use store bought bread crumbs or even saltine crackers if you desire.  The bread just serves as a binder for the mixture to help hold things together.  We didn’t know anything about store bought bread crumbs around our house.

 

mix the ingredients well
Now, jump right in with both hands, and mix it all together.  I folded it, mashed it, squashed it, and folded it some more.  Just mix it all up well and have fun.  Cooking should be fun, so go ahead and squish it through your fingers.

 

shape the mixture into 4 equal patties
Divide the mixture into equal parts.  I made four patties from the pound of beef.  Shape it into patties, like you would hamburgers, only shape it into more of an oval than something round.  For some reason, Salisbury Steak patties always seem to be oval shaped.

 

melt some butter in your skillet
Place your “I Don’t Have A Paula Deen,” regular and well used skillet on medium heat.  Let it warm up for a minute or so, and then add 2 Tablespoons of REAL Butter.  Always use the real stuff instead of margarine.  It’ll just naturally taste better.  Ask Paula Deen, she’ll tell you.

 

add patties to the skillet
Place the patties in the skillet.  Don’t overcrowd them though, give them some space.  I could only get three of mine in at the beginning, but once they cook down some, I’ll add number four.  Let them cook for about 4-5 minutes.

 

split an onion
While the patties are cooking, let’s get started on the onions.  Begin by slicing a whole onion in half and removing the outer skin.

 

slice the onion
Slice each half into about 1/4 inch slices.  Set aside.

 

turn the patties
After about 4-5 minutes, you’ll start to see the bottom edge of the patties start to turn brown like the two in the upper right.  Now, you’ll need to flip them over, and brown the other side for about the same length of time.  They don’t have to cook all the way through; we’re just browning both sides for now, to seal in the juices.

Even with only a 15 percent fat content, the patties will shrink.  After I’d turned all three, I had enough room to add my fourth patty.  You just need to watch the first ones and don’t let them burn.  Take them out when they have browned completely on both sides.

 

remove from the pan
Remove the patties from the pan and set aside.  Again, don’t worry about them being cooked all the way through.  We’re going to continue to cook them some more in just a few minutes.

 

leave the remaining brown bits in the skillet
Don’t discard those brown bits left in the pan.  They are full of flavor and we want to save all of them.

 

add the sliced onions to the skillet
Place your sliced onions in the pan, right on top of all those browned bits.  Reduce the heat just a little, and let the onions slowly cook until they are clear and caramelized.  Don’t rush them.  Let them cook low and slow, stirring occasionally, until they turn nice and brown in color.  This step may take 20 minutes or longer, but its well worth the time.  If they cook too fast, they will burn, and you don’t want that to happen.

The onions will start to turn clear or translucent, and then they will start to brown.  We’ll continue to cook them some more as the recipe continues.

 

sprinkle in a little flour
Now, sprinkle the 2 Tablespoons of Flour all over the top of the onions.

 

stir the flour into the onions
Stir the flour and onions together.  Then, let this cook for about 2 minutes longer to brown the flour.  If you don’t allow the flour to cook and brown at this point, you’ll get a raw flour taste in the finished dish.  Just keep stirring it for about 2 minutes.

 

add water
Slowly add 2 cups of warm water.  It’s just warm water straight out of the faucet.  If you were using a cast iron skillet, you’d never want to add cold water to a hot skillet as it could cause it to crack.    Stir the water and onions together.

 

adding beef granules for additional flavor
Add 2 teaspoons of beef bouillon granules.  I highly prefer the granules as opposed to the cubes.  The cubes always seem to take forever to dissolve.  You could certainly use about 2 cups of beef broth if you had that instead.  This will pump up the flavor of the gravy.

 

stir the mixture well
Stir the mixture well, and then bring the heat back up to about medium.

 

return the steak patties to the gravy mixture
Carefully place the meat patties back into the gravy mixture.

 

cover the skillet and let simmer
Cover the pan.  Let the whole thing simmer on medium or just a notch below medium, for about 15 more minutes.  They just need to simmer lightly and not be at a rolling boil.  You also might want to turn the meat patties over about half way through.

 

remove from skillet and serve.
After about 15 minutes, it’s all ready to serve.  Man, I’m hungry right now.  I’m a true meat and potatoes kind of guy and love this Salisbury Steak.

We cook a lot of dishes with gravy, or gravy and onions, here in the Taste of Southern kitchen.  It seems like most all of them just go best with mashed potatoes served as a side dish.  You could also serve them over a bed of rice if you prefer.  Add some whole corn or maybe some green beans, and a piece of cornbread, and you’ve got yourself a real meal for lunch or dinner any day….even on Sunday.

Ingredients

  • 1 pound of Ground Round Beef
  • 1/2 teaspoon of Black Pepper
  • 1 teaspoon of Salt
  • 1/2 teaspoon of Garlic Powder
  • 1 teaspoon of Worcestershire Sauce
  • 1 whole Egg
  • 1/4 cup of dry Bread Crumbs
  • 2 Tablespoons of Butter
  • 1 large Onion, sliced
  • 2 Tablespoons of Flour
  • 2 cups of Water
  • 2 teaspoons of Beef Bouillon Granules

Instructions

  1. In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
  2. Shape into 4 equal sized patties.
  3. Heat a skillet over medium heat for about a minute, and then add Butter.
  4. Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
  5. Add the sliced Onion into the skillet, right on top of the browned bits.
  6. Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don’t rush this step. Cook the onions low and slow for about 20-25 minutes.
  7. Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
  8. Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
  9. Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
  10. Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.
  11. Enjoy!

Notes

You could certainly use a beef broth as opposed to the granules. Just omit adding the water and granules to the cooked onions and add beef broth instead.

    I’ve never written a review for a recipe. Tonight I made this recipe exactly as written using beef broth as a suggested alternative. In the middle of this awful pandemic this is true comfort food. I made mashed potatoes and green beans. Wonderful recipe!

    OK – I got VERY brave and tried this. I have to tell you that I absolutely HATE minced meat and/or boiled or mashed potatoes, thanks to my school where I’m sure the so-called cooks were only employed because they were the first or only applicants for the job. I suppose I might be called “a glutton for punishment” – so what happened? First, I did find them too salty, perhaps because I’ve been on a reduced-salt diet for some years now, so I’d suggest using minimal salt to the patties and let everyone add their own to taste afterwards. My biggest problem was that the patties fell apart whilst cooking – any ideas? I will add that I’m nearly 6000 feet up here, but I always thought that only affected baking. I should mention that I used a mild flavoured extra virgin olive oil as my in-laws eat kosher, so butter was not an option. The potatoes were sort of OK for me (now that you know where I am coming from!), everyone else loved them. To me, what made it most was the fantastic gravy – I had to use maizena instead of regular flour – I think it’s what you call cornstarch – as I’m in the middle of re-organising my kitchen and couldn’t put my hands on the flour!! Also I added sliced fresh mushrooms because I’m a mushroom freak. And I have to tell you that this gravy is a definite keeper. Yes, I’ll certainly try this again, less salt and probably with rice or pap (that’s a local sort of porridge made from white corn ground coarse, but not too coarse). And, of course, veggies – I had used halved Brussels sprouts, cauliflower florets and courgette slices.

    I found this recipe over 5 years ago now and continue to use it on a regular basis. The flavour is so good and taking the time to caramelize the onions takes the dish to another level. I recently started using the Campbells beef broth with red wine in replacement for the water and it’s amazing. I highly recommend this recipe to both experienced and beginner cooks, the pictures made it fool proof for my just learning to cook brother.

    I have been making your exact recipe since 2012….I always add more butter to the pan before the onions and double the flour and the entire gravy and add gravy master to boost the color, served with egg noodles and green beans….my fiance didnt even know you could make Salisbury steak he just assumed it was a TV dinner…..now he asks for this dish at least once a month!     Until a few months ago, I’d never made (or even HAD!) salisbury steak. After a friend mentioned how much her family of ‘picky eaters’ enjoyed it, I thought I’d look it up. A Google search led me to this recipe — I’m so glad I gave it a try! My family loves it, and I’ve since made it 3-4 times.

    I’ll admit, I made a couple of small changes…but nothing that would substantially alter the recipe or the outcome. As a matter of personal preference I use a couple cloves of fresh garlic in place of the garlic powder. I use 2 c. beef broth in place of the water + beef bullion because I don’t keep bullion on hand. Also, the last couple times, I’ve added mushrooms to the gravy. After the onions have cooked down most of the way, before adding the flour/broth, I toss in some sliced mushrooms. (Given my lack of familiarity with salisbury steak, it’s quite possible I’m committing a faux pas by adding the mushrooms…but I’ll probably keep doing it because the resulting gravy is delicious!)

    I’ve been making this for about 3 years now…I’m not a good cook but this recipe is easy and it always impresses people. It’s just so GOOD. I’ve recently started adding an extra half tablespoon of flour to make the gravy a little bit thicker. Seems to work very well. Thanks for the recipe!

    Fantastic dish! Easy, no canned anything (requirement for me), and delish. I called them burgers for my 4 year olds, and my eater gobbled hers up. Even the picky one tasted it before deciding dinner wasn’t as good as snacks, haha. No worries, not a comment on the food; this is normal for her right now. Hubby and I inhaled ours. I served it with rice, and added some mustard powder and thyme in with the meat mixture. My meat was a little leaner, and I was worried it would dry out, but that worry was totally unfounded. Wonderful meal. Thanks!

    This is my go to salisbury steak recipe. I’ve been making this a little over two years now and I feel it’s high time to leave you a comment and say thank you and mention how absolutely delicious this is. My husband loves this recipe so much he could eat this every night of his life. The smell engulfs our house it smells heavenly, so heavenly the neighbors can smell it haha. Absolutely phenomenal recipe, thank you so much.

    On a side note I do add mushrooms on occasion, but that’s it, everything else I follow exactly.

    I decided tonight that I would cook something that sticks the ribs and I thought of Salsbury Steak. However, I needed a good recipe that is fast and easy to prepare.

    I used Google and found your web. After checking out other Salsbury Steak recipes, I decided to try yours. The main reason I am going to use your recipe is that most recipes call for ingredients that most people occasionally don’t use if at all. Your recipe is simple, and I don’t have to run all over town looking for ingredients that I may use only one in a blue moon if at all. Like your recipe, Salsbury Steak should be simple, tasty, and filling.

    Very good! I recommend like some others said, double sauce ingredients. I also added 1 tsp of worchester sauce to gravy sauce mix. I got the sauce mix to boiling and let it simmer a few minutes while boiling, make sure you stir if you do this. It’s gravy and need to stop every so often. To the meat mixture to have enough moisture and I used 85% ground sirloin, I added 1/4 cup of ketchup and just a few small squeezes of mustard. My favorite meatloaf recipe calls for that. I look forward to making this again! Thanks.

    This is a fantastic recipe. Everyone enjoyed it. The only change I made was I added slices of Bell Pepper, Tomato and Onion (sliced up into about 1/2″ chunks)to the meat while mixing. Delicious! Everyone thanks you for the best Salisbury Steak we’ve had. Dennie

    Great recipe! I have made this several times, and my husband just loves it! Just to make it a little lighter, I use elk meat, omit the bread crumbs, replace butter with EVOO. Oh and I also add mushrooms with the onions. Sometimes I add a splash of red wine, too. Outstanding! This is definitely something we will continue to make. Thank you!!!

    I found this recipe by searching for “Salisbury Steak WITHOUT onion soup mix”, and I’m so glad I found it! So delicious, and worth the extra time to create the perfect onion flavor by carmelizing real onions. This recipe is plenty easy without using things like packaged soup mix or canned mushroom soup.     I looked everywhere for the right recipe and couldn’t find anything without mushroom soup, etc. I can substitute bread crumbs with corn flake crumbs with this one, as my Son is Celiac and has gluten and dairy allergies. This is just perfect. Tastes just e Papa used to make and better then store bought or other recipies that I have tried to perfect but to no avail. Thanks for posting.     If you are going to fry the ground beef in butter, use clarified butter. It can handle the higher heat without burning so much. Or, perhaps, just use oil and baste in butter while it cooks.

    Everyone REALLY enjoyed this recipe. I was looking for a Salisbury Steak recipe that DIDN’T contain ketchup (my own Kryptonite). At first, I felt a little intimidated by all the steps, but soon found out that you mapped out every step succinctly. Meat has a great flavor and the onions added a wonder bite to the meal (you were right, cook them slooooow). Only change I would make is seeing how to double the gravy – I personally thought it could have used more and found myself scraping the bottom of the plate for more! Aside of that, wonderful recipe and is definitively going into my cooking repertoire. Thanks Steve!

    I loved this recipe. I changed it a bit in that I substituted garlic salt for salt and the garlic powder and just added a bit less so it wasn’t too salt. I also minced the onions finely and mixed it into the meat patty rather than adding it to the gravy. I added Eringi Mushrooms (simply because these are fresher and cheaper than the varieties shipped in from the US mainland) to the gravy. I’ll be searching your site in search of more good eats.     This is the BEST Salisbury steak recipe out there. Period. And very pantry friendly! I make it at least twice a month, just as described. Today I had some hamburger patties left from grilling on Sunday but fortunately I put Worcester sauce in them anyway. Added a splash in the sauce when I added them to the onions and sauce, and some minced garlic. And voilà! almost as good as from scratch.

    I stumbled upon this page after eating a TV dinner (Saliusbury steak, of course!) for the first time in years left me craving the real thing. I didn’t have beef, so I made 6 patties out of 1 lb. of ground chicken and ½ lb. of pork sausage mixed together. The only other substitution? Out of Worcestershire sauce so substituted Jamaican jerk marinade. Came out delightful! Thanks for posting this.

    I’m an American living in Germany. My significant other is German and not real well versed in what real American food is. Sadly I think most of the the world thinks we live on burgers and hotdogs :(.

    Anyway I ran across this recipe while scouring the web as a bit of a change of pace to our usual meals and was thrilled.

    I had to use local ingredients obviously so any recipe with lipton soup mix was out. This recipe was so much better anyway. I got rave reviews form the sig other and my son. Only modification I made was to use a 50 50 mix of ground beef and pork, the norm over here unless you wanna fork out the extra cash. It turned out great though. We ate it with kloesse, a type of potato dumpling instead of mashed potatoes.

    Once again thanks so much for the fantastic and easy recipe!!!

      I have been making this dish for many years and decided to use your recipe. I didn’t use garlic because I am not a garlic fan. I did use a little catsup and that was the only alteration to the recipe it is a great recipe and I recommend it to anyone who wants to cook Salisbury steak and gravy.

    I asked my 6 year old grandson what he would like to have for dinner. He had been to a friends house and had “meat that was soft with some stuff on it”. I asked him what kind of meat it was and he replied he did not know but you got a box out of the freezer and put it in the oven.     Oh, my heaven! I was inspired to make Salisbury steak this weekend when we were watching a Food Network show and Hubby commented that he loves Salisbury steak. (12 years married; never knew.) As usual when I decide to make a new dish, I googled to study recipes. Usually, I come up with my own creation and post it on my own blog.     This recipe is amazing- my husband is from Arizona and has never eaten Salisbury steak so I decided it was time to introduce him to it! I served it with a side of mashed potatoes.He loved it and ate it for leftovers too and continued saying how good it was even after a few days!     As an ex-pat Kiwi, the past 1.5 years I have spent in KY have shown me I need to be EXTREMELY flexible when it comes to cooking. Once I was living in the Bible Belt I found out I needed to learn Southern-style cuisine ASAP. I have taught myself how to cook several Bible Belt-style meals, and a good Salisbury Steak recipe was most definitely on my list. Your recipe was perfect and I am slowly altering it so there is less fat in the beef. I also put mushrooms into the recipe when the onions are put in.

    This is a great recipe for people who have never KNOWN this dish, let alone cooked it. You are brilliant!

    After craving Salisbury Steak but still wanting to make a relatively healthy meal, I searched the internet and found your amazing recipe….and can I just say thank you! The gravy alone was worth caramelizing the onions for 20mins. I do have a question though, does the fat quantity in the ground beef lend to the tenderness? I used a 93% lean ground beef and it was amazing, just not quite as tender as I remember from past meals.I’m curious if it might be something I did or just a offset of the leaner meat.

      Hi Peta, I’m happy to hear that you tried our Salisbury Steak Recipe, and happy that you enjoyed it. Regular ground beef contains more fat and may be more juicy, thus appearing to be more tender. I used a “Ground Beef Round” which had a 80/15 percentage of fat in making this recipe. (I’m glad I wrote that down)

      Hi Steve and Peta,

      My Italian grandma always used 80\20 beef never over 85/15 she said it would make her meatballs more tender! She also would spoon the grease out of the spaghetti sauce as it cooked all day long. That doesn’t apply here in this recipe I don’t think. Could drain it before adding onions though.
      Another tip she said is to wet the bread crumbs under water squeeze them out and pinch little pieces to throw in the meat. She would save the ends of bread loves (homemade or bakery bought Italian breads have more body) in a jar on top of fridge. She would put Parmesan cheese and fresh parsley in those crumbs and use those or a piece or bread from the loaf if she had none in her jar. Wet under sink with water and that will help keep meat moist. Dry bread crumbs can absorb the moisture from the meat and make it tougher.
      Just tip from my gramma Agrippa from the ole country in Calabria Italy; she lived till 94 yrs old in Cleveland Ohioand passed away in2011. I’m so glad I got to spend time with her cooking in the kitchen! She was such a great cook; and the most loving gramma anyone could ever ask for! Can’t wait to see her again on the other side! I love you Gramma!

        Hello. I learned something useful about meatballs. Use 1 or 2 day old bread. Keeping it in a jar is great. Do not use old stale dry bread. (At my house, any truly stale bread is soaked in a bit of milk and fed to baby chicks, or pets it is never thrown away!) Older but not stale bread develops more starch which helps bind the meat balls. The lactose and proteins in milk instead of water in the bread helps make a more tender meatball that also binds well. :-)-
        Me, I always drain the fat after browning ground beef. The small amount left in the pan is plenty for flavor. I give drained fat to the cats or the dog. Fabulous Salisbury steak recipe and great tips from Angel.

    I love, love this recipe! I’m getting ready to make it for the second time. I think someone else commented on the lack of mushrooms. I’m going to add them this time while caramelizing onions. Mom always used mushrooms! Last time I served them with mashed and creamed corn. This time I’m going to use rice (and probably MORE creamed corn since we can’t get enough of my homemade corn!)
    As the recipe is written though, it is excellent! I’m going to double it this time (although as someone else mentioned, maybe not the garlic powder!)–leftovers are GREAT!
    $$Saving Hint$$
    If you use a lot of “sirloin ground beef”, try buying Top sirloin steaks at your local Costco or Sams Club. They average about $3-$4 a pound there versus $6.45 a pound at my local supermarket for ground sirloin and $7-$10 a pound for the steaks. If you have a simple blade food “processor”, you can grind it your self. Cut the steaks into 1″ chunks and freeze about 20-25 minutes. Grind a few chunks at a time and viola! Great ground beef! Cheap!

    Made this last night and it was quick, easy and delicious.
    Served with mashed ‘taters and Italian green beans.
    We love recipes that have caramelized onions, so we make large batches in the slow cooker and freeze them in individual freezer bags. Also, I keep a jar of “cooked flour” so when I need to add flour to the gravy I can add a little more if needed to thicken without introducing the “raw flour taste”. Also, for those wishing a thicker gravy, try using a beef base or beef stock as opposed to a broth.
    Thanks again. I plan on making this next with ground venison.

        You can easily make a dry roux on the stove top using a heavy bottom skillet(cast iron is my choice), or using the microwave to do so. Not adding the butter/lard/oil. Storing in a jar. It’s great if you’re camping or hiking, especially, and you want to make gravy and biscuits on the campfire. Easier to do on a stove top vs. a campfire; gets terribly hot;).

    This was wonderful! I had pre-made burgers in my freezer that just weren’t being used up and did this with them. Put the Worcestershire sauce, garlic powder and salt & pepper on them. Think I might add some cayenne next time but other than that this was delicious. I have never had these but saw them all the time growing up, my husband had them as a kid and said this was perfect.

    Hi, just wanted to tell you how much we enjoyed this. I guess I never thought much about Salisbury steak, I do other things with ground beef, meatloaf, Swedish meatballs, hamburger pie, Italian meatballs, etc., but this is a keeper. Easy to make and thank goodness no cream of mushroom soup. When I get to that point in a recipe, I keep on clicking. My husband, Steve, said this needs to go on the regular rotation. After 33 years, it’s hard to come up with something different that doesn’t take 3 hours to prepare.

    Thank you for this recipe. It was wonderful. If I was so excited while cooking it, my husband might have assumed it was my recipe. But there were a lot of first for me in this recipe.
    I have never caramelized a onions, It was a first for me to make gravy from scratch, and I have never used beef bouillon . I annoyed my husband, because I kept interrupting his football game with my “omg babe I caramelized onions, babe my gravy came out great , taste this, how do you” , I was truly excited.
    As he ate his plate, he made a humming sound with almost every bite. And to put the icing on the cake, I looked up to see him licking gravy off his fingers. I was so proud. This was a dish that was for once, equally as good as his mamas meals.
    All I felt like saying to myself was “YES IN UR FACE MS. EMMA”. Lol . Believe me when I say, ur recipes will be something I am looking forward to cooking.

    YUM!!! This recipe was easy and delicious, thank you! I was in a hurry, so I actually sliced the onions and got them cooking while I assembled the meat patties. When the patties were ready to go in I set the onions aside and picked up where the recipe left off when the meat was nearly done. It worked great time-wise.     Thank you so much publishing this recipe. I loved Salisbury steak as a kid and tried to make after I got married. My mom is an amazing cook. But I never could get it right. I even tried packet gravy. Yeesh and yuck! I finally gave up after too many disappointments It just wouldn’t come out right. But after chancing upon your site, I felt the need to try one last time.

    Turns out I was doing everything wrong. Heat too hot, cooking too fast. I followed your recipe and it turned out beautifully! Low and slow did the trick, I followed your time suggestions exactly. I used my large electric fry pan so I could cook all the patties at once and avoid burning the butter. I used one cup of chicken broth and one cup of water which gave it a nice deep, rounded flavor. I only have better than boullion soup base and followed the equiviliancy suggestion. It was a little strong, so I think I will use a little less. But I wouldn’t change anything else. The texture and flavors of the meat and gravy were perfect!!

    A wonderful recipe! Something my whole family can eat. Which is a really big deal. My eldest has texture issues, which makes it hard to find something we can all enjoy. No gravy for him, just ketchup. 😀 But he loved it! Mashed potatoes and green beans on the side. Fantastic!! I will recommend your site and recipe to everyone. Thank you and God bless!

    Being a very old and experienced cook (in plain home-cooking) I don’t use many recipes from websites, and certainly have never commented on one so this is a first! I was looking for a new and different Salisbury steak recipe (my own never has been consistent or very good) and stumbled onto your website. I like the idea of this recipe, but I kept looking for the mushrooms. (Aren’t they a main feature of Salisbury steak?) But no matter; I think I can slip them in after the onions have sauteed awhile, but before I add the flour. Whaddya think?

    But my point of commenting is that I have browsed some of your other recipes and am favorably impressed – and for good reason, at least to me.

    1) You use basic ingredients that I, or most anyone, has on hand. Some recipes call for things that I don’t even know what are or what they add to the dish. But I do know how expensive some of these spices and herbs and “trendy” ingredients are, especially if I never use them again.
    2) You use common kitchen equipment that I have. Sorry, but I don’t want to put things in various contraptions to “pulse” x-number of times before adding something else and pureeing, and then putting the mess through some other machine, or using a “one-use-only”, expensive pan or pot specific to the recipe.
    3)You definitely leave some leeway in your recipes (such as the one I’m about to try).

    I’m probably much older than you, and I have said for years that while a cook may cook certain foods to please someone else, he or she cooks those foods to please himself/herself. (Don’t think I’m saying that very well, but hopefully you’ll understand.)

    In reading some of your recipes, I kept thinking “He needs to know this”, or “I should share this little trick with him”. But I don’t want to start making a lot of suggestions at this time.

      Hi sondra don’t forget many younger or just inexperienced cooks love to hear tricks!! It doesn’t mean that I wouldn’t cook the recipe the way Steves recipe says especially the first few times but a variation or addition is always nice to try too. Any cooking tips tricks help us all.
      That’s what makes cooking so fun try it like it keep it! If not don’t try that again lol! There are many young people looking at online recipes just married wives husbands college kids many inexperienced people that want to learn how to cook so I can speak for them when I say “oh do tell us!” 🙂 we want to learn!     Salisbury steak is basically a technique to transform hamburger back into a steak. So, just to have fun, I shaped the patties like small T-bone steaks and after they were cooked, I cut a hole to fit a small onion ring that I pressed into the meat and filled it with horseradish sauce to resemble a bone and marrow. I didn’t put it back in the gravy, served that on the side. Was it ever clever – oh yes it was!

    I’ve never made Salisbury steak;I’ve only had the ones in the TV dinners, sad to say. I wanted to try, so I was looking for what I call a “real” recipe: One that doesn’t involve packets of this and cans of soup. You know what I mean, a real scratch recipe where you actually know what’s in it. I tried this one the other night, and it was a winner! I added some mushroom slices to the sauce because they needed using, but otherwise stuck to the program. I loved it, and my husband said, “I’ve never had better Salisbury steak.”

    So, thank you! I’ll be making this often. I like hamburgers, but this beats them hands down. And I’ll be checking out your site for more good things to try. the whir you’ll be hearing will be my printer working overtime!

    Thank you thank you!! Iv’e never made nor had “real” Salisbury steak, I made this the other day and it is definitely mine and my husbands new favorite! Finally something new to do with ground beef! I used Panko bread crumbs, soy sauce instead of Worcestershire sauce (didn’t have any), and beef cubes (didn’t have the granules). I just mashed them up before I added them so they would dissolve easier! The caramelized onions definitely made this recipe, just thinking about it makes me want to make this again! That being said, even if you don’t like onions, DON’T skip them! They flavor it so much and end up being so soft you don’t even notice them! Thanks again for the awesome recipe, just added it to my favorites bar and am now going to explore your other recipes!

    Oh, oh, oh my was this ever GOOOODDDDD!!!! I had another salisbury steak recipe I’ve been making for years, but it just lacked something. So I came across this one & liked that it didn’t have ketchup & other different ingredients. Let me tell you…one bite from the family & I knew I found the perfect recipe!!!! It is so delicious and easy to make. My 10 year old son helped cook this & he loved it even more! The only change I made is I used beef broth instead of bullion & water, and increased the liquid to make extra gravy. So I had to add a bit of cornstarch/water slurry to thicken more at the end but that doesn’t effect flavor. And I cut back salt to 1/2t and it was still perfectly seasoned. Anyway, this is a keeper, and thanks so much for sharing this recipe!

    I’ve just found your recipe here and I can’t wait to try it. I love salisbury steak but most of the recipes on-line include canned soups. What????? Why not just eat those nasty frozen dinners at that point. Haha. I just wanted to leave a quick tip for anyone who may be having trouble with their sauce/gravy. You’re a lot less likely to get lumps in your sauce if you add room temp or cold water or stock to the flour and onions. I don’t know why, but once I learned that trick – I have perfectly lump-free sauces and gravies every time. 🙂 Thanks for sharing your recipe.

    Thank you for posting this recipe. I was browsing the web for salisbury steak recipes but there wasn’t much with a lot of reviews from people that said it was delish. I made this today and it was great. Definitely a different taste to it. I used seasoned breadcrumbs and college inn brand beef broth. However, the gravy wasn’t thick at all and I really wanted it to be thick. Any suggestions? Thank you

      You could try adding a little corn starch or flour to the broth towards the end of the cooking cycle. That should help thicken it up a bit for you. You might even cut back a bit on the amount of broth you use should you try the recipe again. I hope this helps.

    I’ve been looking for a Salisbury steak recipe for the longest! Although I am trying to go meatless for awhile I decided to do something different with the remaining ground beef in my freezer. I came across your website and recipe and was happy to see the visual aids included, especially since I’m a visual person for the most part. I made it and was thoroughly impressed and proud of myself!!! Not bad for my first time and I truly enjoyed them. Although I followed the recipe to the T I think next time I’ll cut back on the black pepper and Worcestershire sauce a bit because it was a bit to spicy for me. Other than that they were on point!!!     Hi again Steve. Pete here from Woodstock Ontario. I made a 3 pound batch of these last night. Our three kids don’t like onions so I used one pan for onion gravy and the other one just plain. And for lack of space I put the 13 steaks in 2 glass dishes and covered in foil and put in oven around 45 minutes at 275. Wow everybody loved it and all were gone. I served with corn and those mayo mashed potatoes as well! I really like meatloaf but this will be what I will be making instead now! Going to try the banana pudding tonight and I’ll let you know how we do with it.

    I read your recipe and it is almost the same as mine. I saute sliced portabello mushrooms with the onions to beef up the sauce, use Campbell’s Beef Consumme diluted to make two cups, put the Worcestershire sauce in the gravy and thicken with cornstarch, We just had it yesterday with mashed potatoes,peas and carrots and rolls. 😀

        WOW!! What a delicious recipe! I pulled out ground beef from the freeze to use with my 1/2 Jimmy Dean Italian Sausage (had 1/2 a package left over from last night’s spaghetti), with no idea what to make…I’m so glad I stumbled across this recipe! Other than adding 1/2 (bulk) sausage, and a lil Everglades Seasonings, I followed this recipe to a “T”! Our dinner table was completely silent, as my hubby, 7 & 3 yr olds practically licked their plates clean! Definitely will add this to our weekly dinner rotation! Thanks!

    This recipe was exactly what I was looking for, from scratch and no packaged onion soup packets used like many other sites that I’ve seen. First time coming across your website and sure glad I did. I made this recipe for dinner and it was just wonderful and perfect. Great recipe instructions with illustrations.     I found this recipe from an internet search and decided to give it a try. It was so easy and fairly quick. I did make a slight change though. I had no Worcestershire sauce in the house so I googled substitutes for it. I found many but ended up mixing two of them to get what I hoped was a close flavor match. I mixed some malt vinegar I had with some honey hickory bbq sauce. Also I in true chef did not measure my seasonings but I can tell you the flavor came out great! I will definitely be making this one again. Seeing as my family gobbled it up like they hadn’t been fed in weeks.

    Best salisbury steak recipe i’ve tried cooking! All the other recipes i had used doesn’t even compare to this one! Thank you for sharing! I make this every two weeks just so my family won’t get sick of it. But if it was up to me i would probably make this a couple times a week. My fiance and his kids eat this with rice.     I can’t wait to try this recipe. I have one question, my boyfriend doesn’t want me to use any onion so I will be skipping that step, do I still need to add the 2 cups of warm water or just skip down and add 2 cups of beef broth and simmer for 15 minutes?

      Hi Samantha, If you skip the onions, you’ll be missing the best part, they add so much flavor to the recipe. Of course, I guess if he doesn’t like them… he just dosen’t like them. I added the 2 cups of water because I was going to add the Beef Granules which in turn… makes my beef broth. If you’re using a pre-made beef broth, like what you find in the containers, you would not add any water and just go ahead and add the prepared beef broth. I hope I’m understanding your question right as opposed to adding more confusion. Maybe you could add some Onion Powder to give it a little flavor without the actual onions… unless he just totally doesn’t like the taste of onions that is. I hope it turns out well for you, minus the onions. I’m glad you found the recipe and that you’re willing to give it a try and “make it your own.” Let me know how it turns out and I do hope you’ll stop by for more visits with us… real soon.     I tried this recipe for dinner and it was a hit!! Seriously, the flavor was amazing; MUCH better than those little frozen dinners you can buy at the grocery store. I used beef broth and made my own bread crumbs with a slice of wheat bread. I also added a pinch of corn starch to thicken up the gravy a little and served it up with fresh mashed potatoes and corn. And your instructions for caramelizing the onions were brilliant. I’ve never caramelized onions before but they came out great!

    Thank you so, so, sooo much for all the hard work you do for this website. It’s so difficult to find great recipes and it’s just wonderful to have this resource for ideas. You truly are the BEST!!!

    This was great! Thank you for providing such a tasty recipe. I followed the recipe exactly and it tasted wonderful. I picked this recipe to use because it reminded me of my father’s recipe. I have also made this using ground turkey with great results. Lately, I have been using chicken breasts that I lightly flour and cook in a combination of oil and butter and I complete it the same way I would the salisbury steak. The only change was I added some mushrooms and white wine to the roux. It was a hit at dinner time 🙂

    Steve, these were the absolute best Salisbury steaks I’ve ever made. For years I had used a recipe that my family loved. Changed it up this time and we were all pleasantly surprised. This took “comfort food” to another level. Served it with mashed potatoes, sweet corn, and buttered rolls. Yum! Will definitely check out more of your site. Blessings from Maryland!
