Quick Cherry Cobbler Recipe

Quick Cherry Cobbler Recipe:

My beloved little car recently decided to finally give up on me through a transmission failure.  I’ve had some problems with the transmission off and on over the past 6 years, but this time it just didn’t want to go any further.  It’s only the second time it’s left me stranded in those 6 years so I’m certainly not complaining.  Still, being stranded along side of the road isn’t much fun and being without a car for a week or so isn’t much fun either.

I’ve been very thankful to have the little car as it’s been a real blessing to me in more ways than one.  We’ve made a lot of good fishing trips together over the years and the motor is still purring like a champ.  I just haven’t decided whether to replace the transmission or seek something newer.  I’m very much attached to it and hate to just park it for good.  You know what I mean?

A few days at home soon found me with a sweet tooth that wouldn’t quit and nothing in the house that I could grab for a quick fix.  Then, I thought about a recipe that one of my auction house buddies had recently shared with me.  A few weeks back, I purchased the ingredients to make it but I’ve been working on some other projects for Taste of Southern and just hadn’t got around to doing it yet.

There is this super nice couple, Genelle and Charles, that sit in front of me at the auction I attend each weekend.  We constantly talk to each other and it’s usually about food.  Go figure.  Well, recently, Genelle brought me a hand-printed card with a quick and easy recipe that she said she thought I might like to try.  Just the fact that it was written out by hand made it super special and something I’ll cherish forever.  I love handwritten recipes.  I love finding them in old cookbooks or maybe tucked inside of an old magazine.  They just speak to my heart.

Anyway, here’s the recipe that Genelle shared with me.  I was so excited when I remembered I had already purchased the few ingredients and got right up and started working on it.  The only thing that took anytime at all was the fact that I was taking pictures of the whole process to share with you here on Taste of Southern.  Even at that, in just a few minutes I was pulling a bubbling hot Cherry Cobbler out of the oven.  And yes…it satisfied that nasty old sweet tooth in no time.  Thank you Genelle!

Quick Cherry Cobbler, ingredients.

Quick Cherry Cobbler:  You’ll need just four ingredients.  Margarine or butter will work just fine.

Here’s a copy of the actual recipe card that Genelle gave me.  Don’t you just love it?  It just takes me back to reading so many handwritten recipes that my mother and my aunts use to trade with each other.  It’s so simple it’s written on just one side of the card.  Of course, I’ve got a printable copy of the recipe at the bottom of this post for you.  And, while we do a lot of “made from scratch” type of recipes here on Taste of Southern, sometimes you just want to satisfy that sweet tooth as quick as possible.  Right?

Quick Cherry Cobbler, add the cherries.

The hardest part of the whole recipe will probably be opening up the can of cherries…or blueberries…or apples….whatever fruit filling you decide to use.  Just open the can and pour the cherries into a baking dish.  The recipe says to use a 8″x8″ dish.  I just grabbed this deeper casserole dish because I didn’t want anything bubbling over inside the oven.  Play it safe.

Then, open up the box of cake mix and sprinkle it all across the top of the cherries.

Spread the cake mix around evenly over the cherries.

I zapped the butter in the microwave about 10 seconds at a time until it melted enough that I could drizzle it all over the layer of cake mix.  It’s hot so be careful.

Quick Cherry Cobbler, add the pecans.

Sprinkle the pecans over the top.  You could omit these all together if you don’t have any on hand.  Or, you could make a simple crumb topping that would probably be equally as good.  Lots of possibilities with this little recipe.

Bake at 375º for about 45 minutes or until the top is golden brown.

In no time you’ll have a deliciously bubbling hot dessert that you can eat all by yourself.  Well, maybe a good portion of it.  Not that I ate a large hunk of this all by myself or anything like that.  I’m just saying you could…if you had a really bad sweet tooth type of craving.  Oh…you know what I mean.  Just as Genelle said at the bottom of her handwritten recipe….”Delicious and so easy to make.”  We hope you’ll try it soon.
