No Bake Pie

I’m all about simple recipes for the most part. Sometimes you do have to get more involved, but this is not one of those times. I think you’ll get a lot of mileage out of this recipe once you try it.

We made this one using a Cherry Pie Filling, but you could certainly use another favorite. I think it would be great made with Strawberries, Blueberries, even Peach Pie Filling. Lots of possibilities once you get the base completed.

This is yet another recipe from our Stewart Family Favorites Cookbook that was created years back by my mothers side of the family. They put together this small cookbook to use as a fundraiser for our annual family reunions. My mother, her sisters, and some of our cousins contributed some of their “favorite” recipes to the collection.

I did find an error in this one though. The recipe in the book called for a 3 ounce package of Cream Cheese, but I’m pretty certain that should have been 8 ounces. I’ve corrected it for you, so you can follow our step-by-step, and it’s corrected in the printable version at the bottom.

It’s not overly sweet, and the tartness of the cherries were a good opposite for the confectioners sugar that the recipe calls for. My thanks to Mary Byrd for listing it as one of her favorites in the cookbook.

So, whenever you need a super quick and easy dessert, try this one. I’m sure once you do, you’ll be trying it again with other fruit toppings. Let the kids help too. Smile.

I’ve found similar recipes online that refer to this as a no bake cheesecake. It does remind me of cheesecake, tell me what you think when you try it. Smile.

 

No Bake Pie, add cool whip.
Begin by placing the carton of thawed Cool-Whip in a large mixing bowl.

 

No Bake Pie, add the cream cheese.
Add the package of softened Cream Cheese.

 

No Bake Pie, add the confectioners sugar.
Add the half cup of Confectioners’ Sugar.

Confectioners’ Sugar will keep the pie from having a somewhat grainy texture as opposed to using regular granulated sugar.

 

No Bake Pie, mix well.
Use a hand mixer, set to medium speed, to completely mix the ingredients together until smooth and creamy. It took me about three minutes to do this.

 

No Bake Pie, spread mixture in crust.
Spread the mixture into the pie crust.

 

No Bake Pie, add the cherry filling.
Spread the cherry filling over the top of the cream mixture.

 

No Bake Pie, refrigerate for two to three hours.
Cover your pie using the clear plastic lid that came with the pie shell. Place the pie in your refrigerator and let it firm up for two to three hours prior to serving.

 

No Bake Pie, enjoy a slice.
I actually placed mine in the freezer section for about three hours to let it get really cold and firm. Made it slice much easier. Smile.

Ingredients

1 small carton Cool Whip (8oz) thawed
8 oz package Cream Cheese, at room temperature
½ cup Confectioners’ Sugar
1 can Cherry Pie Filling (21oz)
1 Graham Cracker Pie Crust


Instructions

Place the Cool Whip in a large mixing bowl.
Add cream cheese.
Add confectioners sugar.
Mix ingredients well and spoon into the pie crust.
Spoon pie filling over  top of Cool Whip mixture.
Place in refrigerator and chill for 2-3 hours prior to serving.
Enjoy!


Notes

Use your favorite pie filling to make a variety of pies with this recipe. Freeze it for later or just freeze it to make it slice easier.

    We used to make this cherry cream cheese pie as kids with my Grandma, she would let us have the beaters after she filled in the pie crust. Great memories! Thanks for posting this recipe. My Grandma has since passed, but now her great grandchildren even make this dessert and think of her!

    Thanks so much for reminding me about this great recipe!
    I think the variation I’ve used called for condensed milk and bottled lemon juice but either way it’s got to be good.
    I think I like it with cherries the best. I’ve added a drop or two of almond extract before to bring out the cherry flavor.

    Hey Steve, I used to make this years ago and I just used my hand mixer. I have had the Artisan stand mixer for about 3 years and I use it all the time. You can even shred chicken in it. I never use the hand mixer anymore. I even bought the metal bowl as mine came with the glass bowl. The metal bowl is great for whipping cream. I ordered mine from Amazon, sometimes you can find real good deals there.

    Thanks, Steve, for this recipe! It sure did bring back memories! Back in the early 60s when I was new to teaching school, we made a similar pie that was very popular. The pie showed up at any meeting or occasion where dessert was available. In our pie, we lined the crust with sliced bananas then poured on the creamy filling and topped the whole thing with blueberry pie filling. It was sooooooo yummy! Of course we used Dream Whip back then…I think Cool Whip was not around yet. (smile)
