Description
A tasty citrus flavored cake to welcome Spring or St. Patricks Day. Made with cake mix, eggs and Sprite Lemon-Lime Soda. Easy Lemon-Lime Frosting is made with Confectioners Sugar, Crisco and Lemon and Lime Juice. So easy. So Delicious.
Ingredients
Lemon-Lime Soda Cake Layers
2 Boxes White Cake Mix 16oz each
2 Large Eggs
1 16oz Sprite Lemon-Lime Soda
Lemon-Lime Frosting
2 lb. Confectioners Sugar
1–1/3 cup Crisco Shortening
1/4 cup Lemon and Lime juice combined as desired
Instructions
Place the cake mix in a large mixing bowl.
Add the eggs.
Add the Sprite Lemon-Lime Soda
Mix on low speed until fully combined. Do not overmix.
Prepare cake pans with oil and flour.
Divide the cake batter between the pans.
Bake at 350F degrees for 30-40 minutes until done.
Remove to a wire rack when done. Let cool 10 minutes.
Flip cakes out of pans and place back on wire racks until cooled.
Make the frosting.
Sift the bag of confectioners sugar into your mixing bowl.
Add the Crisco Shortening.
Add the juice. Mix it half Lemon and half Lime to equal 1/4 cup of juice.
Mix on low speed, increasing to medium speed, until fully combined and fluffy.
Add more juice or sugar as needed to obtain the right consistency.
Frost and decorate cake as desired.

Notes
Make this as a sheet cake: Combine one box cake mix and one 12oz can of Sprite soda. Stir until combined. Prepare sheet pan with shortening and flour. Pour in batter. Bake at 350F until done. About as simple as you can get when making a cake. You can also use other flavors of soda to make different flavored cakes. Experiment with it and have fun.
