Ingredients

  • 56 Bell Peppers
  • 2 Tablespoons Vegetable Oil
  • Salt and Pepper to taste
  • Extra Virgin Olive Oil, optional

Instructions

Preheat oven to 450 degrees.

  1. Wash peppers under cold running water.
  2. Cut each pepper in half.
  3. Remove seeds, stems, and trim away excess pith.
  4. Place cleaned peppers in bowl.
  5. Add vegetable oil.
  6. Use your fingers to coat each pepper, inside and out, in the oil.
  7. Sprinkle with salt and pepper to taste.
  8. Place peppers on a large baking pan, leaving ample space between each one.
  9. Place in 450 degree oven for about 15 minutes or until peppers are tender and charred.
  10. Remove from oven, place back in bowl and cover with plastic wrap until cool.
  11. Remove skins, scraping as needed to clean.
  12. Place in a small jar and cover with olive oil until needed.
  13. Store in refrigerator for up to two weeks.
  14. Enjoy!
