Ingredients

  • 2 Cornish Hens, fully thawed
  • 2 ears of fresh Corn, cleaned
  • 1 lb small Red Potatoes
  • 1 Yellow Summer Squash
  • 1 Zucchini Squash
  • 1 Red Onion
  • 2 Sweet Potatoes
  • 2 Carrots
  • ¼ stick Butter, melted
  • Olive Oil
  • Salt and Pepper to taste

Instructions

Preheat oven to 350F degrees.

  1. Cornish Hens must be completely thawed before roasting.
  2. Rinse all vegetables under cool running water, set aside to drain.
  3. Rinse the game hens under cool running water, pat dry with paper towels.
  4. Inject marinade into hens if desired.
  5. Place breast side up on roasting pan.
  6. Season hen with salt and pepper as desired.
  7. Rinse the sweet potatoes, place on roasting pan with hens.
  8. Place the sheet pan in the preheated oven.
  9. Let cook for 30 minutes
  10. Remove husk and silk from the ears of corn. Cut into smaller pieces.
  11. Slice the red potatoes in half. Place in large mixing bowl.
  12. Cut the yellow squash into chunks. Add to bowl.
  13. Cut the zucchini into chunks. Add to bowl.
  14. Cut the carrots into chunks. Add to bowl.
  15. Drizzle the vegetables with a small amount of olive oil. Toss well to coat.
  16. Cut the onions into quarters.
  17. After hens have been roasting for 30 minutes, remove the pan from the oven.
  18. Spread the vegetables around the pan in a single layer. Sprinkle with salt to taste.
  19. Baste the hens with a small amount of butter. Return the pan to the oven.
  20. Continue to roast the hens until done. Internal temperature should reach 180F degrees.
  21. When done, remove from oven, let rest 10 minutes before slicing and serving.
