These are an old favorite from my youth. Chocolate Oatmeal Delights are quick and easy to make, but you do have to wait for them to cool and firm up before you can enjoy them. That’s the only thing hard about this recipe. They’re delicious though.
2 cups Granulated Sugar
1/2 cup Unsweetened Cocoa Powder
1 stick Butter
1/2 cup Milk
1/2 cup Peanut Butter
Dash of Salt
1 teaspoon Vanilla Flavoring
2–1/2 cups Old Fashioned Oatmeal
Place sugar in a medium sized sauce pot.
Add the cocoa powder. Whisk together until well mixed.
Add the butter.
Add the milk.
Place over Medium-High heat on stove top.
Stir until butter is fully melted.
Let mixture come to a rolling boil and boil for ONE MINUTE.
Remove from heat.
Add the peanut butter.
Add dash of salt.
Add vanilla flavoring.
Stir well to dissolve peanut butter.
Gradually add the oatmeal, stirring as you go to fully coat.
If mixture seems runny, add a few more of the oats until mixture is slightly thick.
Drop by large spoonful’s on parchment paper or lightly greased baking sheet.
Let cool completely until firm.
Once firm, cookies can be stored in a container or jar on the counter top. Or, cover them securely and store them in your refrigerator.
