Here’s a really simple recipe that just needs about an hour to slow simmer before its ready to serve.  You can take advantage of some cheaper cuts of beef anytime you find them on sale and, whip up some great Southern comfort food that can be served with rice, mashed potatoes or even noodles.  It’s your choice.

Stew beef works very well for this recipe or, you can use eye of round steak like we did.  You can even go all out and make it with a finer cut like Ribeye steak.  The really great part is, whatever you find on sale, can probably be used to make our Beef Tips.  Buy it while its on sale, freeze it and have it ready for a quick and easy lunch, dinner or Sunday dinner.  I think you’ll like it about any time of the day.

Around the south, just about all the local mom-and-pop style restaurants feature Beef Tips with Rice and Gravy on their menu.  It’s an old diner favorite that is also usually one of the cheaper menu choices because it can take a somewhat tougher cut of beef, slow simmer it to make it tender and, then serve it up with a large portion of rice and gray to cut costs.

Its so versatile in that it tastes great when served over rice, over mashed potatoes or, even over noodles.  I really think you’ll love it once you try it and I’ll look forward to hearing from you after you do.  You can follow our step-by-step, photo illustrated instructions below or, skip on down to the bottom for our printable recipe.  Ready to get started?  Alright then… Let’s Get Cooking!

 

Beef Tips, ingredients.
Beef Tips with Rice and Gravy:  You’ll need these ingredients… and some rice of course.

 

Beef Tips, cut beef if needed.
I’m using this eye of round steak so I needed to cube it up first.  You can use stew beef that is already cut into pieces if desired.

 

Beef Tips, bacon grease.
Use a medium size sauce pan to cook in.  Place it on the stove, over medium heat and, add some cooking oil.  I like to add a little extra flavor by using about a Tablespoon of bacon grease.  It’s not required, olive oil or any other type of cooking oil or shortening will work just as well.

 

Beef Tips, add some butter.
I even tossed in a Tablespoon of Butter.  It’s optional of course.

 

Beef Tips, add the beef.
Add the beef to the sauce pan.

 

Beef Tips, add the onion.
Peel and slice the onion and, toss it in on top of the beef pieces.

 

Beef Tips, brown the meat.
Stir it around as it cooks, let the beef brown a bit and until the onions start becoming translucent.

 

Beef Tips, add beef broth.
Add the Beef Broth.

 

Beef Tips, bring to a boil.
Bring the mixture to a good rolling boil.

 

Beef Tips, cover and simmer.
Cover the pot, REDUCE THE HEAT down to a low simmer and let it slowly cook for about one hour.  Now, lets make the rice.

Beef Tips, prepare the rice.
Prepare the rice:  After the meat has simmered for about an hour, go ahead and prepare the rice.  You’ll need some good rice and a little salt.

 

Beef Tips, add rice.
You’ll find lots of different ways to prepare your rice.  I’m using one of my favorites here.  About any type of rice will work, just use what you have available.  I like to rinse my rice first so here I’m adding one cup of rice into a small sauce pan.

 

Beef Tips, rinse the rice.
Place the pot under cool running water and just let some water run into the pot.  The rice usually stays on the bottom and I swish it around a little to help remove the dust particles and a lot of the starch that rice contains.  Once the water starts to run clear, you’ll need to drain that water off.

Rinsing rice is a choice and not always necessary.  It seems to keep your rice from being so sticky and clumping all together.  Of course, Instant Rice or Boil-in-Bag types of rice are other choices that usually turn out pretty much perfect.  Again, its all your choice.

 

Beef Tips, drain off the water.
Once the water starts to run clear, drain off the excess by just tilting the pot carefully and letting the water run out.

 

Beef Tips, add more water.
Now, add two cups of cool water back into the pot.  You need about a 1cup rice, 1-1/2 cup water or, 1 cup rice and 2 cups water ratio.  I added just a little over a cup and a half back into the pot.

 

Beef Tips_ add salt.
Add the salt but, don’t stir it.  Stirring the rice in the water will release more of the starches and that will just cause it to be sticky.  Instead, gently swirl the pot a time or two and place it on the stove over Medium-High heat.

 

Beef Tips_ bring to a boil.
Leave the pot uncovered and bring the rice to a good rolling boil.  Let it boil for about 2 minutes at a rolling boil and then reduce the heat.

REDUCE THE HEAT:  Reduce the heat down to about Medium-Low and let the rice simmer.  DO NOT STIR.  We want to let it cook long enough for most of the water to be absorbed by the rice or evaporate out.  This could take 5-10 minutes or so.  Just keep a close watch on it.

 

Beef Tips_ watch for craters.
Once most of the water has cooked out of the rice, you’ll start seeing little open pockets in the rice.  Watch it closely, without stirring and, without letting all of the water boil away completely.  You’ll need just a little of the water in the bottom so the rice doesn’t burn and stick.  Burnt and sticky rice is NOT a problem you want to have.  You can thank me later.

 

Beef Tips_ cover tightly.
Now, cover the pot with a tight fitting lid and remove it from the heat.  It needs to sit for about 10 more minutes.

 

Beef Tips_ mix the cornstarch.
While the rice is resting, add about 2 Tablespoons of Corn Starch into a small cup or bowl.  We’re going to thicken up our gravy.

 

Beef Tips, add water.
Add about 3 Tablespoons of cold water.

 

Beef Tips, mix well.
Use a small whisk or fork and, mix it up well until it is all liquid.

 

Beef Tips, add to beef.
Slowly add the cornstarch and water mixture into the pot with the beef.  Add it slowly, stirring constantly.  This mixture will thicken up the liquid in the beef and make a gravy.  It just needs to cook a few minutes longer to thicken up properly.  If its still too thin for you, make up about half a batch more of the cornstarch and water combination and add it into the beef.

 

Beef Tips, fluff the rice.
After the rice sits for about 10 minutes, remove the lid.

 

Beef Tips, fluff with a fork.
Use a fork and gently lift the rice from the bottom of the pan.  Gently lifting the rice will fluff it up and separate the grains.  It’s now ready to serve.

 

Beef Tips, add some butter.
You could even toss in a pat of butter for a little added flavor but… its optional.

 

Beef Tips, plate it up and enjoy.
Place a serving of Rice on each plate, top it with some of the Beef Tips and Gravy.  Ummm… good.

If I have leftovers, I just mix it all together and store it in the refrigerator for later.  This will keep your rice from drying out once it goes into the refrig.  How easy was that?  Enjoy!

Ingredients

  • 1lb Sirloin Tip, Stew Meat or Round Steak, cut into bite size pieces
  • 3 cups Beef Broth
  • 1 Onion, medium sized, sliced
  • 1 Tablespoon Bacon grease, butter or vegetable oil
  • 2 Tablespoons Cornstarch
  • Salt and Pepper to taste
  • 23 cups of prepared Rice

Instructions

  1. Cut beef into about one inch cubes.
  2. Place a medium sized sauce pot on medium heat.
  3. Add bacon grease or cooking oil.
  4. Add beef.
  5. Add onions.
  6. Stir the meat and onions until the meat is lightly brown.
  7. Add beef broth and bring to a rolling boil.
  8. Cover, reduce heat to medium-low and simmer for 1 hour or until beef is tender.
  9. In a small bowl, mix Cornstarch with cold water, stir well.
  10. Slowly add the cornstarch to the beef and broth, stirring constantly.
  11. Simmer another 10 minutes or until gravy has thickened.

Prepare the Rice:

  1. Place rice in a medium size sauce pot.
  2. Run cool water in the pot, swirling the rice around until the water runs fairly clear.
  3. Drain off the water.
  4. Add needed amount of cold water back into the pot.
  5. Place pot over medium-high heat and bring to a rolling boil. Cook for about 2 minutes then, reduce heat. Let rice continue to simmer on medium-low heat until most of the water has been absorbed.
  6. Watch for small pockets to appear in the rice. Do not stir but watch it carefully.
  7. Cover with a tight fitting lid and remove from heat.
  8. Let the rice rest, covered, for about 10 more minutes.
  9. Fluff the rice with a fork prior to serving.
  10. Place a portion of rice on each plate, add a serving of the Beef Tips and Gravy. Enjoy!

Notes

You can use a lot of different types of beef to make this recipe. Everything from stew meat up to ribeye steak will probably work. Its really a great way to use up some of the less tender cuts of beef that you often find on sale.

    Hello Steve, would like to put in a word for canned deer meat. We ate a great deal of canned meat mainly because it is delicious, entirely cooked in the canning process and required no refrigeration. Perfect for a camp environment. Our favorite with deer meat was sautéed bell pepper, onion and fresh diced tomato. Make gravy with meat broth from jar, probably need more liquid for gravy, add meat to just heat up. Season to suit yourself. We called it grillardes and enjoyed over grits, rice, potatoes or biscuits. He Arose! Happy Easter

I lightly batter my beef tips and brown them, remove them from the skillet, using the grease, then add maybe 2 tablespoons of flour, cook until brown add onions, then add 1-3 cups of water or beef broth and that’s where I get my gravy from. then put my beef tips back in gravy and simmer until tender. yummy!!!

    I planned on having beef with green peppers and rice for a get together tomorrow, and thought I’d have to cook the meat for several hours so I started it tonight; I had it on the stove for 2 hours and it’s sooo tender and tasty!     I know this recipe has been up for awhile, but I just wanted to say it’s amazing. My mother used to make this, but I never learned how to make it from her.     This is the second time I have used this recipe and I only use the beef part as I cook my rice in an instant pot. This second time around I have added fresh bell peppers and jalapeno peppers from my garden. It was amazing. Highly recommend this recipe!

    I made this the other night, exactly as written, though I used about 1 1/2 lbs of chuck roast. It was delicious. My husband and my granddaughter both loved it. It made enough for another meal for my husband and I. This has always been a meal ordered in diners. But the recipe is so incredibly easy, no reason not to have it at home. Thank you for this and all your wonderful recipes. I’m new to this site and I love it! Next I’m going to try your recipe for Chicken Pastry. My husband’s people are from North Carolina and the older folks made these and I loved them.     I want you to know that I was born and raised in Birmingham, Alabama, and this recipe is–by far–the best recipe for Beef Tips & Rice that I have found, and made, ever.

    I grew up tasting the best of the best in Southern cooking because I was raised by a family that not only enjoyed eating good food, but they also enjoyed making it. So when I became pregnant with my daughter, I started craving Beef Tips & Rice after having it in a very well known diner/cafe in Tuscaloosa that is known for their amazing southern cooking. The problem with making it for myself is that the people who could give me the recipe have passed on, or they never used a recipe because they just don’t use recipes when they cook food. So there was no recipe to go by, and I felt like I was doomed to crave something that I couldn’t have or make whenever I wanted it. All of the Mom and Pop restaurants that are in a 50 mile radius of where we live make this dish, but they only do so once in a blue moon, and my hormones didn’t seem to want to wait until these restaurants got it together.

    So I decided to get proactive and find the perfect recipe for myself. That way, I wouldn’t have to wait to get something I wanted NOW. That’s when I found your recipe online. I had tried quite a few before I found yours, and they just were not quite right. Your recipe was the best out of all of them. It is actually real authentic Southern Beef Tips & Rice. There were no peppers, or weird spice combinations. It is the real thing, and it tastes amazing!!! It is the only one I use, and my husband instantly starts salivating–as do I–when he hears that I am making it for dinner. Sometimes I put it in a crock pot early in the morning so that it is there, ready and waiting, when we get home from work. Sometimes, I make it on the fly in the middle of the night because my daughter–and my hormones–say “NOW!!!” I just wanted you to know that this recipe has made my family, and myself, very happy!!! We thank you for sharing it, and we are excited to sit down to dinner in an hour, or so, and clean our plates!

    Most Southern families have cooks with all kinds of variations on classics. My mother’s stewed beef was sooooooo good. But the thing I notice on so many cooking sites is the lack of adequate seasoning of meats before cooking. I see no mention of that in this recipe. That makes for bland tasting food! Even if only salt and pepper (but usually more than that)…season that meat! And the browning is oh so important!

      I absolutely love this recipe and the only thing I add to the mix is some mustard, about a half a tablespoon (IF) I’m in the mood for a little tang to the meal. I have also used some Pomegranate Vinegar to add to the flavor a bit. But all in all, this is a great, easy and perfect recipe for, as stated not the best cuts of meat. But if you leave on the burner at simmer for about an hour and a half, any meat will be tender and perfect.

    But the biggest win was the instructions on how to make rice. Before finding this recipe I ALWAYS ruined the rice and I was about to break down and purchase a rice cooker.

    Hi, I just wanted to thank you for sharing this recipe. I made this dish last night and it was delicious. I didn’t have any corn starch around so I wasn’t able to make thick gravy but with just the beef broth it worked out well. I couldn’t find your instructions on how to make the broth (and I’m a novice) so I luckily found a beef bullion cube in our cupboard and followed the instructions on there. I followed your other instructions though and everything turned out great. I was nervous when I went to take the 1st bite because I’ve followed other recipes and things didn’t taste too good. I was so excited because the beef tasted delicious. I am definitely saving this as one of my favorites. I love comfort food. I live in SC so I’m always craving southern foods.     Big mistake in this recipe that is fairly common. Beef should be SEARED before braising, otherwise you are missing out on a lot of flavor. You can also flour the tips and get a good crispy sear, its better than adding cornstarch after the fact. Sauce will thicken and flour taste will ‘cook out’ during the braising time.

    Browning merely slightly cooks meat on the outside. Searing carmelizes it.

      You are so right…I’m making for dinner tonight using stew meat…flour the meat cook it in the pan with oil…just like when I make cube steak and gravy…you make your gravy from the left over grease then I add the meat back to the gravy and simmer

    yummm, I make this too. What I do differently is brown the meat in lard to make some fond, then add the onions. It helps make a richer browner gravy. Also good with pork instead of beef.
    I like to make a lot of meat and gravy. One day it’s served over rice, next day over mashed potatoes. Or noodles, or sourdough bread toast.
    Heck, make a nice gravy from scratch, put cold leftover meat to heat through and serve over anything. You just cannot mess up a comforting delicious classic like this.

      Muriel, I totally agree, we southerners have been making a version of stroganoff out of any kind of meat for generations. Be it fresh or leftover meat, smothered in a well made gravy makes domestic or wild game delicious served over rice, noodles, potatoes or bread. Good Stuff!!

    I followed your recipe and it worked out great! One extra step I took to make this meal more “lean” was after the 1 hour simmer, take the beef and freeze it in a container.
    By freezing it over night/weekend little white piece of fat come to the surface, easily removed with a spoon prior to the next reheating and then thickening.

    Also could substitute veg broth.

    My family has been making this meal ever since I can remember. We do it basically the same except we use cube steak and while the meat cooks we add onion(obviously) and green pepper. Once the broth is added we load it up with mushrooms. We do cheat and use minute, rice but I refuse to feel guilty. It’s hard enough to get supper on the table these days, I’ll use whatever convenience is available. We absolutely love this meal. In fact, it’s on the menu for tonight. Bon Appetite, y’all.

    I made it this evening for my wife I. Was done in about an hour, and was tasty. Didn’t have corn starch, so used a couple “big” tablespoons of flour mixed up with some of the hot juices. What’s that? Yeah…too much flour, turned it right into paste. 🙂 But, a little more beef stock, a little more heat, it’s all good. Plus, you can never have too much gravy, right?

    I was born and raised in Oklahoma and Beef tips with Rice is truly a favorite there. But we moved to Colorado after grades school. I went back to Oklahoma for College and remember the cafeteria making beef tips and gravy with rice for lunch or dinner. I LOVED IT!

    I loved it but had not had it in years. Now that I seen your recipe, it almost seems right. But if I have to be honest, the way I remember it being made in Oklahoma was to add a handful of diced or minced bell peppers to the saute. But never tomatoes. (changes the flavor profile too drastically._) Perhaps that method is southwest style. I dunno.

    Just tried this recipe. My grandmother handed me some sirloin tips and my husband started reminising about beef tips and rice from a gas station up the street. (I don’t know what people are talking about when they bash gas station food, here in Georgia, those cooks throw down!)

You could certainly substitute the flour instead of using the cornstarch, it just might take a little more. Use it the same way as we described for the cornstarch and everything should work out fine.     We gave this recipe a spin last night and it was EXCELLENT! I followed your recipe nearly exactly, I just doubled the onions, because we really like onions!

    My husband was raised in Europe and has never had Beef Tips with rice and gravy, so he was a little skeptical of it, but he ate it and sang its praises to the heavens, haha!

    We decided next month, we are going to make this recipe again As a base for a beef and mushroom pie. We will make this, add in a pound or so of whole mushrooms, and pour it into a pie crust, topping it with puff pastry. I have a feeling it will ALSO be excellent! This recipe, and perhaps the beef and mushroom pie, once tested, will BOTH become regulars on our family’s menu.

    So I’m stuck at home and only have chicken broth. How much will that make the recipe taste different?

      Hi Amber, Hmmm, tough question. I don’t think I’d use the Chicken Broth. Even if you did, start out with a small amount so as not to make it taste more like chicken than beef. I would just go with a little water, maybe adding a dash of soy sauce, or Worcestershire Sauce. Not much though. If by any chance you had mushrooms, you could add those. Just a few suggestions, that MIGHT work, don’t know for sure.

    I’ve been on the lookout for a good beef tips recipe for years now, but none ever tasted like the old restaurant my dad used to take me to as a kid. Murrell’s shut down after several decades and was eventually demolished. These taste like I remember! I did add a couple handfuls of frozen chopped bell peppers because they were used in the ones from long ago. I did most stuff as you’d described, plus adding in some garlic powder & kitchen bouquet browning sauce because those Murrell’s tips were real dark, thick, & rich in color & flavor. I had a lot of juice, even though I used only 5 cups broth to the 5lbs of cheapo London Broil cuts of beef, so at the end I added 3 packages of McCormick brown gravy mix as well as the corn starch to thicken it all up. Man we loved it & will have meals whenever we want next week! Thanks Steve! Oh, & I made your mom’s cathead biscuits tonight for the 5th time in 2 weeks! I guess you could say they went over well too! I’m starting to get the hang of making the tops pretty now…Lol. Have a good night & thanks a bunch!

    My husband loves beef tips with gravy from Schwans and said that it’s the best! But let me tell you, the price was not! So I have been searching for a simple recipe and just about every one of them that I came across used some kind of cream soup( which I am sure it is good ). Then I found this one….very simple and I love that the gravy is just from it’s natural juices and not from a can. Well, my husband LOVED it and says it’s 10 times better then Schwans!     I’ve attempted several times to make beef tips with gravy and rice that were tender and tasty, like what my Grandma made when I was a kid….all my previous attempts were less than successful until I found your recipe! Turned out perfectly tender, tasted liked Grandma’s. I was thrilled that my husband said it was one of the best dishes I’ve made. Even my 3yr old daughter loved it, minus the onions.     I tried this recipe and it was superb!!! My nieces and nephews loved it, and they are such picky eaters. They hate onions but loved this recipe. I had a quick question, is it possible to make the beef tips in a crock pot, or should I stick to the cast iron? I have both but the cast iron is so heavy and I try not to use it as much even though I love how it cooks.

    Made this tonight, trying to appease three generations of food prefs in our family. No tomatoes for one, no cheese for another, blah, blah, blah. Thus your beef tips were a winner before ever hitting the table! And THEN they were a double winner. Delicious.
    I have ancient Wearever aluminum pots, and a few Vollraths older than everyone in the house. They’re harder to heat-control than newer pans, but they do force me to watch what I’m cooking. The rice turned out beautifully, though next time (yes, there will be a next time!) I’ll turn the heat a little lower for the simmer. No little pockets formed for mine, but even so, it was dang near perfect.
    I had between 1-1/2 to 2 lbs steak tips (probably the end of hanger steak meat, but who knows with labels these days?), so I didn’t think it would tender up as nicely as you promised in such a time frame, but boy-howdy. I used maybe twice as much onion, because mine was a monster Vidalia – absolutely yummy. I didn’t flour my beef, or add seasonings, not even salt and pepper; this dish didn’t need any. The bacon fat and extra butter did the trick!
    My only difficulty was time. Took about twice as long as the recipe states. Living here on the high rocks around old limestone quarry land, I don’t have a gas line to the kitchen, so I have electric, and it’s harder to get going and to cool down. My simmer on the meat pan kept slipping down too far; I probably didn’t goose the temp enough. I ended up with the meat taking longer, and with way too much juicy stuff to gravy up, so I had to dip it out. (Saving it, of course!) I didn’t have beef broth, so I used those Swanson flavor booster packets – just squirt ’em out and mix with hot water. Worked perfectly.
    Man oh man, was this tasty. Every recipe I found around here called for lotsa Mexi flavorings, and I wanted something less carne guisada. This was da bomb!

Rice can just be hard to get along with sometimes but I’m glad yours turned out good for you. Nothing wrong in my book with using more of those Vidalia onions. Those folks down in Georgia just know how to grow some great onions don’t they? Even though you had to make some adjustments, it sounds like you had everything under control.     This is the third recipe I’ve tried from your site and it came out wonderfully!!! I added a little garlic powder, black pepper and salt to the beef and gravy for flavor. I didn’t have any rice on hand, so I just used hot buttered egg noodles instead. It was so good and it’s all thanks to you!
