Ingredients

  • 3lbs Pork Backbones
  • 6 cups Water
  • 1 small Onion, sliced
  • 1 Tablespoon Apple Cider Vinegar
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt

Dumplings:

  • 2 cups All-Purpose Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 cup milk, approximately

Instructions

  1. Rinse the backbone pieces under cold running water.
  2. Place a large saucepot on Medium heat on your stove top.
  3. Add the backbone.
  4. Add water.
  5. Slice the onion thinly, and add to saucepot.
  6. Add apple cider vinegar.
  7. Bring mixture to a slight boil. Cover pot. Reduce heat to Medium-Low.
  8. Simmer backbone for 1 to 1 ½ hours, or until meat is tender.
  9. Remove backbone from broth and let cool.
  10. Remove bones from the meat. Discard the bones.
  11. Add salt to broth.
  12. Add black pepper to broth.
  13. Prepare the dumplings mixture.
  14. Place flour in a small mixing bowl.
  15. Add baking powder.
  16. Add salt.
  17. Whisk dry ingredients together well.
  18. Gradually add milk, as needed, to dry mixture to make a dough.
  19. Bring the backbone back up to a slight boil.
  20. Drop the dough by small spoonfuls, into the boiling water.
  21. Cover pot. Let boil about 15 minutes.
  22. Do not remove lid or stir until ready to serve.
  23. Enjoy!

Notes

Regular canned biscuits can be used to make the dumplings if desired. Just pinch each biscuit into about three pieces and drop into the hot broth. Cover the pot and let cook 10-15 minutes without stirring.
