These light, petite, dainty little sandwiches are perfect for your next party, family gathering, or just a cool summer snack on a hot day. They’re just so refreshing, and so simple to make.

I’ve heard about cucumber sandwiches for as long as I can remember, but what few parties I’ve ever attended never served any that I can recall. So, I decided to just fix some of my own and see what all the fuss was about. Smile.

Anything this easy to make is a blessing when you’re trying to serve up snacks and appetizers for family and friends. Just a few ingredients are all you need and you can stir them up in hardly any time at all.

I would note that the recipe calls for just two teaspoons of the Italian Seasoning Mix. This wasn’t the entire package and I had some left over. Once I mixed it with the cream cheese and let it rest the required 30 minutes, I tasted it, and decided to add a bit more of the seasoning. Just taste yours prior to serving to see what suits your fancy the best.

You could even mix up the cream cheese a day or two ahead of time and refrigerate it until needed. It does spread easier at room temperature, so pull it out of the refrigerator about an hour before you need to spread it.

Cucumber Sandwiches, add cream cheese to mixing bowl.
Place the softened cream cheese and the mayonnaise in a medium sized mixing bowl.  Add the two teaspoons of Italian Dry Seasoning Mix.

Please note that this was NOT the entire packet of mix that I bought. I had some left over.

 

Cucumber Sandwiches, mix everything together well.
Use a spoon and stir everything together until fully combined. Let this rest for about 30 minutes so the flavors can blend together.

 

Cucumber Sandwiches,slice the cucumbers.
Slice the cucumbers as desired. This will really depend on how you intend to serve your sandwiches. I did some in rounds, and some longer strips as an example.

 

Cucumber Sandwiches,spread the cream cheese on the bread.
Spread a layer of cream cheese on each slice of bread. I’m using rye bread here. Use a small spatula to spread it out evenly over the entire slice.

 

Cucumber Sandwiches,add a slice of cucumber.
Place a slice of cucumber on top of the cream cheese mixture. Garnish the tops with thin slices of the cucumber peel, or with some dill or red onion slivers as desired.

Do the same if you’re using white bread. Spread a thin layer of cream cheese on both slices.

 

Cucumber Sandwiches, place the slices of cucumber on the bread.
Layer on the slices of cucumber. Place the second slice of bread on top of this.

 

Cucumber Sandwiches, trim the edges.
You want them to look all nice and dainty, so trim off the brown edges. Smile. Then cut the sandwich into triangles.

Description

Cucumber sandwiches are the perfect little party sandwich. All light and dainty, ready in just a couple of minutes and ready to party whenever you are.


Ingredients

1 – package softened Cream Cheese (8oz)

2 – Tablespoons of Duke’s Mayonnaise

2 – teaspoons of Italian Salad Dressing Dry Mix

Rye, Pumpernickel, or white bread

Cucumber, thinly sliced


Instructions

Place the softened cream cheese in a medium sized mixing bowl.

Add the mayonnaise.

Add the Italian Seasoning mix.

Stir everything together until fully combined.

Set aside for at least 30 minutes.

Spread a thin layer of cream cheese on each slice of bread

Top with a thin slice of cucumber.

Garnish as desired.

Enjoy!

    I like the sound of the spread! I usually make cucumber and hard-boiled egg sandwiches to take on a hike (I like tomato and egg, but nowadays raw tomato gives me gout!). Next time I’m going to make them with this spread. I like white pepper on my cucumber – ours are different from yours, ridged surface and twice as long, we call them English cucumbers and I imagine they taste a little different – but also very refreshing. Next time I have to provide a plate of food for a function I’ll try out your dainty version.

    Of course, we can’t get Duke’s Mayo here but I usually make my own anyway – and NO sugar!

    I love cucumber sandwiches! However, this year I MUST lose some weight and can’t have much bread. So maybe I’lol mix up the spread and dip my cukes

    Hey Steve,
    I get asked frequently to make cucumber sandwiches from my friends. My recipe is a little different from yours. I let my cucumbers rest on paper towels to remove extra moisture. I spread the bread slice with cream cheese mixed with chopped watercress. Then place the cucumber slices on the bread, lightly salt, and cover with the other bread slice with the cream cheese mixture.

    The cucumber spread sounds delicious! Do you have an estimated idea of how long the cream cheese, mayo, and Italian seasoned spread will last, in the frig, after it is made? I am curious. I might need to make it and share it to avoid throwing any away. (I am the only one in my home that will eat it.)

      Hi Ann, I suspect it will keep well in the fridge. Probably several weeks if not even longer. I had a bit leftover and it’s been in the refrigerator for two weeks now and is still good. Seems to even have more flavor than when first made. Maybe it’s just me though. Smile. Thank you for the question. I appreciate your visit and trust you’ll visit again… real soon.     Steve, this reminds me of the old Texas standby, cream cheese, black olive and chopped pecan stirred up and served on Sunbeam white bread. I don’t think we used mayo due to fear of salmonella, but it could be dressed up for a church picnic or stuffed in a lunch bucket. We thought we were in high cotton when it was served, crust or no crust.
    Funny that cucumbers seem alien, but we rarely hesitate to put a pickle on a sandwich.
    Thanks for the memory and tasty cream cheese mix.
    We are attempting to grow Okra in Alaska this year, the potatoes and carrots are in but not up yet. Have to put out cukes and zucchini this week. It was 55F out last night, but I think the frost has quit!
    Be safe in this that heat, I do not miss that!

    Good Morning!

    Since childhood, I eat cucumber sandwiches all year long, but not fancy like your recipe, just mayo and cucumber slices, a little salt. Favorite of mine, better than tomato sandwiches. I will try your recipe, I really love cucumber sandwiches. I have made a variation of your recipe, peel the cucumbers, slice in half and scoop out the seeds, otherwise it gets soggy. Chop cucumbers and add finely grated carrots, and mix the cucumber and carrots in softened cream cheese, add a sprinkling of garlic salt to taste, spread on white bread that has been put in the freezer for a little bit to make it stiff, but not frozen all the way, cut the crusts off and then carefully slice the bread into finger sandwiches. Tastes great and makes a nice presentation for guests.

    This is a delicious little sandwich to make Steve. Thanks for the recipe. I have even done this: Add a ring of Red onion and a slice of tomato with the cuke… with the same seasoning and cream cheese ingredients. Hubby loves them for the summer.
